Introduction
Yersinia enterocolitica is a Gram-negative bacillus or a cocci, having a size of 1-3.5 x 0.5-1.3 μm, mostly scattered, sometimes arranged in short chains or in piles. The bacteria do not form spores, no capsules, and their flagella are formed under culture conditions below 30°C, which will be lost when the temperature is above 35°C. The bacteria are easy to grow on ordinary medium at 25-30°C and are highly resistant in vitro and sensitive to moist heat and chemical disinfectants. The bacterium is invasive and can also produce heat-resistant enterotoxin, which is related to pathogenicity.
