Biomass produced during food production is a valuable material for the extraction of different bioactive molecules. In this study, apple pomace was used to produce pectin, and the processing was analyzed by tests such as DE, galacturonic acid content, and methoxylation. Eventually, the processing conditions with better results were obtained by comparison. It was verified that the pectin extracted through this condition had high cytocompatibility and potential for biomedical applications. This study provides a demonstration for us to detect and analyze the DE during biomass processing.1
