It is found that seaweeds contain a variety of compounds including pigments, vitamins, and phenolics, which have good antioxidant activity. In this study, the content of compounds including pigments, phenolics, and vitamins in eight seaweeds was examined and the correlation between these compounds and antioxidant activity was evaluated. The results showed that β-carotene content was 0.55 mg/100 g and fucoxanthin content was 3.12 μg/g. Pigments are powerful antioxidant compounds. This study provides data support for exploring the potential applications of seaweeds as functional foods. It also provides a demonstration for us to detect and analyze the pigments in seaweeds.
