Anaerobic digestion is an efficient, green, and environmentally friendly alternative method for treating food waste. In this study, the effect of head space and temperature on the biochemical methane potential of food waste was investigated by examining the specific acid-producing activity, hydrolysis activity, volatile fatty acids, etc. The optimum temperature and head space for anaerobic digestion of food waste were finally obtained through analysis, which provided data support for food waste treatment research. This study also demonstrated how to detect and analyze specific acid-producing activities.
